【Roots: My Grandmother’s Kitchen】
I was born in the Veneto region, famous for its Prosecco wine. My childhood was shaped by the rhythm of nature—growing vegetables, raising chickens, and making homemade wine and grappa. Passed down through three generations, from grandmother to mother to me, our family flavors taught me to respect ingredients completely. This gratitude is where my cooking begins.
【Training: Absolute Discipline & Elite Craft】
I dove into professional kitchens at 14, learning traditional Venetian cuisine through the intense pace of five-star luxury hotels and high-volume local restaurants. At 24, I moved to London to push my limits. Working under the great Chef Alberico Pennati at the iconic Harry’s Bar, I mastered an elegant, essential style: highlighting the best seasonal ingredients without overcomplicating them.
【Evolution: Falling in Love with Japan】
In 1999, at age 28, I chased my dream and arrived in Japan. Stunned by Tokyo’s incredible energy, I spent four years leading an Italian-owned kitchen. Discovering the delicate palates of Japanese guests and the richness of local ingredients unlocked a new level in my cooking. Today, I preserve traditional Italian souls while crafting sophisticated dishes made specifically to resonate with you.
2004 marked the beginning of a big new chapter: opening my own restaurant.
On February 16th, Ristorante Stefano was born in Kagurazaka. Surrounded by Tokyo’s energy, this neighborhood felt like a cozy, hidden village—a unique place where a diverse, international community comes together. I knew right away it was where I belonged.
While the restaurant was intimate and small, I embraced it completely. As the Italian proverb goes:
“Botte piccola fa buon vino” > (The smallest cask makes the finest wine).
A smaller kitchen meant absolute quality control, allowing me to craft the perfect dining experience for every guest.
私たちにとって最も大きな成果は、お客様の季節ごとのおいしい料理と家庭的な雰囲気のニーズを日々満たすことです。
満足したお客様の笑顔ほど報われるものはありません。
For us, the greatest achievements are made daily by fulfilling our customers’ needs for seasonal, quality food and a cozy atmosphere.
There’s nothing more rewarding than seeing a satisfied customer smile.
We are pleased to announce that we have been awarded the 2022 Diploma di Buona Cucina by the Italian Ambassador and the Italian Culinary Association.
We have been recognized for our respect for Italian culinary traditions, our consistent provision of original, exquisite dishes made with high-quality Italian ingredients, and our dedication to authentic Italian cuisine.
We would like to thank the Italian Ambassador and the Italian Culinary Association for this award, and we would also like to take this opportunity to thank our customers for their continued patronage.
In 2011, following a rigorous evaluation process, we were awarded the MOI (Marchio Ospitalità Italiana) certification, recognizing that we provide the same high standard of cuisine and service found in Italy itself. This international certification is part of a project promoted by organizations such as the Italian Chamber of Commerce in Japan (ICCJ). Our mission is to enhance the image of Italian restaurants abroad while guaranteeing the quality standards of Italian hospitality, and to promote authentic Italian cuisine, wine, tradition, and culture around the world.
Enjoy original seasonal Venetian cuisine in a warm atmosphere.
Give your guests a unique experience and make their time truly memorable.
